Absolutely Love the Chiang Mai Paste
The Chiang Mai Paste is my favourite of the curry pastes. I prefer the plant based one, as I do not like the taste of fish sauce. No matter how small the amount of fish sauce that is added to any dish, I can taste it. I was very pleased to find the plant based range of curry pastes that has the same flavour, without the fish sauce taste. I love the Chiang Mai paste with chicken and noodles by adapting the Chiang Mai Curried Noodle Soup recipe. I just half the amount of stock and reduce to make a thicker sauce for the noodles. I also leave out the palm sugar as it doesn’t need it.
